Hello Bread friend, welcome to A.Bun.Dance. Bakery. If we haven’t met my name is Joe Stein, I’m a bread baker in St. Louis, MO. I have worked as a cook and baker in kitchens and restaurants for many years and now bake bread from my home under Missouri Cottage law. I focus on naturally leavened, rustic breads (think sourdough), crackers of different varieties, and a few types of soft rolls/buns. Thank you for taking the time to explore and checkout the site.

Ordering

As of now I bake on Sundays and take orders throughout the week, cutoff for orders being at 3pm on Fridays. Pickups are preferred but delivery is an option. First mile from my house is free, then a 2$ fee for further deliveries. I will text you once your order is ready to be picked up and am usually done by mid afternoon on Sundays. Depending on what you order will determine about what time your order will be ready. As of now the bake order looks like this.

Crackers done Saturday/Early Sunday.

Bread: Country 1st/ Cranberry Walnut 2nd/ Asiago Black Pepper 3rd/ Focaccia 4th/ Buns/Rolls 5th.

For example if you order crackers and a focaccia, the crackers will be ready late morning but focaccia is one of the last to bake so the full order won’t be ready until mid/late afternoon.

Depending on the amount of orders I receive will affect ready times. I have 1 oven I’m working with that can do 4-5 loaves at a time, so depending on the number of rounds I have to bake will affect when items are ready. I try to adjust on bake day so things are done around the same time each week, but sourdough works on its own timeline, so concrete pickup windows are difficult to set up before Sunday at the moment. I appreciate your understanding and flexibility with this.
